GREAT, GREAT GRANDMOTHER'S OLD
FASHIONED TEA CAKES
 
3 eggs
1 1/2 c sugar
3 sticks butter
4 c plain flour
3 tsp baking powder
2 tsp lemon extract (may use vanilla)

Sift flour and baking powder, set aside. Beat eggs thoroughly. Cream butter and sugar; add eggs. Add 3 c of flour to mixture. Sprinkle remaining flour onto a large platter and knead dough. Don't roll too thin.

Bake in 350°F oven until slightly brown. Store after cooled, in air tight container.
