HONEY APPLE BUTTER 
10 c. peeled, chopped apples
2/3 c. honey
2 tsp. ground cinnamon
1/2 tsp. allspice
1/4 tsp. each cloves, nutmeg, lemon zest
Dash of salt

Put all ingredients in a crock pot. Cover pot and put on high for 1 1/2 hours, then turn dial to low. Stir well and cover again. Cook for 8 hours. By this time, the contents will have reduced to about 5 cups and thickened. You can leave it this way (thick with small soft chunks of apple), or put it in the food processor or blender to make smooth. Pour into jars and seal or into plastic containers and freeze.
