PURPLE HULL PEA JELLY 
Wash purple hull peas and put in water, boil until they change color. Then squeeze through cheese cloth or colander.

4 c. juice
4 c. sugar
1 pkg. Sure Jell
1 tbsp. lemon juice

Place juice, lemon juice, and Sure Jell in saucepan. Bring to boil. Add sugar and boil about 10 minutes or until jelled, put in jars.
