APPLESAUCE CARROT CAKE 
2 3/4 c. flour
3 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1 tsp. nutmeg
4 eggs
3/4 c. oil
2 c. sugar
1 tsp. vanilla
15 oz. applesauce
3 c. shredded carrots
1 c. raisins
1 c. chopped walnuts

Mix flour, soda, salt, and spices in mixing bowl. Set aside. Beat eggs in another bowl; stir in oil, sugar, and vanilla. Add applesauce and carrots; mix well. Add this mixture to flour mixture, stirring just enough to moisten. Fold in raisins and walnuts. Half of nuts can be sprinkled over top, if desired. Pour into greased 9 x 13 inch pan. Bake about 45 minutes at 350 degrees. When cool, frost with cream cheese frosting.
