APPLESAUCE CAKE | |
1 1/2 c. applesauce 1/2 c. shortening 2 c. sugar 1 egg 1 box raisins (white) 2 1/2 c. flour 1/4 tsp. salt 1/2 tsp. cloves 1/2 tsp. cinnamon 1 c. chopped pecans 1/2 c. broken walnuts 2 tsp. baking soda 1/2 c. boiling water Cream shortening. Add sugar, egg and applesauce. Use a little flour to dredge fruit and nuts. Set aside. Sift remaining flour with salt and spices. Dissolve soda in boiling water. Add flour mixture alternately with water and creamed mixture. Add the floured raisins and nuts. Pour in a greased and floured pan. Bake 1 hour and 15 minutes in 350°F oven. No frosting unless you prefer to dust with confectioners sugar or frosting of your choice. |
