FRIED APPLES 
6 tart apples, unpeeled, cored and sliced thinly
1 stick butter
3/4 c. sugar
1 tsp. cinnamon

Heat iron skillet and melt 1 stick butter. Pour apples into skillet on butter (not too hot). Sprinkle 3/4 cup sugar and 1 tsp. cinnamon over apples. Cook slowly, stirring often. Do not brown, just fry slowly until done.
