MINT FROSTED BROWNIES 
2 eggs
1 c. sugar
1/2 c. butter, melted
1 tsp. vanilla extract
6 tbsp. unsweetened cocoa
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped walnuts (optional)

Preheat oven at about 350 degrees. In a large bowl, beat eggs well; gradually beat in sugar. Blend in melted butter and vanilla. In a medium bowl, combine flour, cocoa, baking powder, and salt. Add to egg mixture, blending thoroughly, then stir in walnuts, if desired. Spread batter into a greased 8 x 8 x 2 inch square pan. Let bake for 20 to 25 minutes or just until brownies begin to pull away from sides of pan. Let cool, then frost with mint frosting. Cut into squares when frosting has set.
