ONION CHICKEN
This is a great dish for those children that say they wont eat anything with onions. You can taste them but you don't see them. And the tomato gives it a nice overall flavor that make kids and adults come back for more. Believe me they wont know until you tell them!

4-8 boneless chicken breasts
1 tbsp. oil
salt and pepper, to taste

ONION SAUCE:

2-3 medium yellow onions
1 whole garlic clove
1 cup water, divided
1 (15 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce

You will need a blender. Also a skillet to sear chicken; needed also a giant casserole pan.

Preheat your oven at 400°F.

Peel your onions and dice into medium to small pieces. Crush your garlic or grate it. Place into blender: onion and garlic add 1/4 of the water. Add the can of diced tomatoes. Blend well until smooth. Stir in tomato sauce or blend in. Set aside.

Sear both sides of the chicken in a hot skillet with oil. When done set aside.

Spray or grease casserole pan. Place chicken in pan. Add a little salt and pepper to your chicken. Pour over the top your blended onions and tomato sauce. Flip the chicken over in the pan to be fully coated.

Place the dish into the oven turning the oven down to 350°F. Bake for 20 to 30 minutes or until chicken when sliced is fully cooked inside.

Serves 4-8.
