FLOUNDER ROLL UPS 
4 med. sized flounder (1 1/2 lbs.)
1/2 c. chopped onion
2 cloves garlic, chopped
1/2 c. chopped celery
1/2 c. shredded carrots
1/2 c. chopped mushrooms
2 tbsp. parsley
1 c. soft bread crumbs (whole wheat, rye or white bread crumbs may be used)
Approx. 2 tbsp. lemon juice
1 tsp. lemon rind
1/2 tsp. Old Bay Seasoning
1/4 tsp. pepper
Approx. 2 tbsp. olive oil

Prepare fish: wash and dry. In skillet add olive oil, onions, garlic, carrots and mushrooms. Saute until soft. Remove from heat, add parsley, crumbs, lemon rind, seasoning and enough lemon juice to moisten mixture. Spread mixture on fillets.

Roll up and place seam-side down on a greased shallow baking dish. Brush tops of fillets with olive oil. Sprinkle garlic powder and paprika over the top of roll ups. Bake at 375 degrees for 20 to 25 minutes or until fish flakes when tested with fork.

Orange roughy or sole may be used instead of flounder. Chicken broth instead of oil may be used to saute vegetables.
