LISA'S BREAKFAST CASSEROLE 
1 large pkg. frozen hash browns
2 c. grated cheese
1 medium white onion, chopped
6 eggs, whisked together with 1 c. milk (may use Egg Beaters and skim milk)

In 13 x 9-inch casserole, sprayed with vegetable spray, layer hash browns, cheese and onions. Pour egg mixture over top of layers.

Bake at 350°F for 45 minutes or until top is bubbly and brown. Serve with fruit, bacon, biscuits. Note: For Dinner - Add green pepper, tomatoes, mushrooms, all sorts of chunky stuff and top with picante sauce.
