SAUCY CHICKEN & VEGETABLES
(MICROWAVE)
 
16 oz. pkg. broccoli, cauliflower & carrots (frozen)
2 whole boneless chicken breasts, halved
1/4 tsp. onion powder
1/4 tsp. garlic salt
1 can cream of mushroom soup with 1/3 less salt
1/2 c. lowfat sour cream
1/4 tsp. thyme leaves
1/3 c. dry bread crumbs
1 tbsp. butter

Arrange frozen vegetables in a 9" microwave safe baking dish. Arrange halves over vegetables. Cover with plastic wrap and microwave on High for 15 minutes. (Rotate dish twice.) Remove and sprinkle with onion and garlic.

In a small bowl combine soup, sour cream and thyme; mix well. Pour evenly over chicken and vegetables. Cover with plastic wrap. Microwave for 2 minutes on High.

In a small bowl combine bread crumbs and butter. Sprinkle over dish then microwave for 30 to 45 seconds on High. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
