PETE'S PASTA | |
1 lb. (3) bratwurst or other cooked white sausage 3 cloves garlic, minced 1 (28 oz.) can Italian plum tomatoes, coarsely chopped with liquid 3 tbsp. olive oil 3 sprigs fresh rosemary 1/4 tsp. hot red pepper powder or minced dried hot pepper 1 lb. penne Heat salted water for pasta. Skin the sausage and mash the meat with a fork. Heat the oil in a large skillet and add the garlic. Cook over medium heat until golden. Snip with scissors or mince rosemary and add to garlic for a minute. Add sausage meat and toss until well coated, 1-2 minutes. Add the tomatoes and hot pepper. Cook over medium high heat until oil separates from tomatoes, about 10-20 minutes. Meanwhile, cook the pasta until al dente. Combine pasta and sauce in a large bowl and serve with freshly grated Parmesan cheese. Serves 4 to 6. |
