EASTER FRITATTA 
1 lb. sausage, sweet or hot to taste
1 lb. ricotta cheese
8 eggs

Brown crumbled sausage in large fry pan. Drain grease. Add 8 whipped eggs with ricotta mixed in. Cook on low heat until omelette is set. Watch for sticking. Flip onto a large dish and slide back into the pan to finish. Serves 4.
