SWEET POTATO PIE 
1 (40 oz.) can sweet potatoes, drained
1/2 c. brown sugar, packed
1/2 c. granulated sugar
3/4 c. milk
4 eggs
3 tbsp. butter
3/4 tsp. salt
3 tsp. lemon flavoring
Unbaked crust for 2 medium pies or 1 huge pie

Mash sweet potatoes and remove any strings which may be found. Mix all other ingredients with potatoes until smooth. Spoon into crust and bake at 400 degrees 55 to 60 minutes or until knife inserted into middle of pie comes out clean.

(Canary Smith used to make such wonderful Sweet Potato Pies that tasted just like my Mother's. I began to experiment with recipes until I finally came up with this combination of ingredients and I believe they are as nearly like Canary's and my Mother's as I can get them.)
