HEARTY MINESTRONE | |
1/2 lb. ground beef 1 med. onion, chopped 2 lg. cloves garlic, crushed 3 (10 1/2 oz.) cans condensed beef broth 1 (28 oz.) can whole tomatoes 1 c. sm. egg pasta bows 1 (16 oz.) pkg. frozen vegetables combination: Broccoli, green beans, pearl onions, and red peppers 1 med. zucchini, sliced In 6 quart Dutch oven, over medium high heat, brown beef 5 minutes. Add onion and garlic; saute 3 minutes longer. Add broth, 3 soup cans water, the tomatoes and their liquid, 1/2 teaspoon salt, and 1/4 teaspoon pepper. With wooden spoon, break up tomatoes. Bring to boiling; add pasta. Simmer, covered, 8 minutes. Stir in frozen vegetables and zucchini; cook 5 minutes longer. |
