FRESH APPLE CAKE 
1 1/2 c. wheat flour
1 1/2 c. white flour
1 tsp. cinnamon
2 c. sugar
2 tsp. baking soda
1 tsp. salt
1 1/4 c. oil
3 eggs, well beaten
3 c. diced apples
3/4 c. nuts
2 tsp. vanilla

Sift together flour, sugar, cinnamon and soda. Add salt; place in mixing bowl. Make a well in the center and add oil, eggs, apples, nuts and vanilla. Beat at lowest speed until all ingredients are well blended. Pour into greased tube or Bundt pan. Bake at 300 degrees for 1 3/4 hours. Let cool in pan 15 minutes, then turn onto plate.
