FISH WITH CREOLE SAUCE 
Cooked fish
3 tbsp. vegetable oil
2 tbsp. chopped onion
2 tbsp. chopped green pepper
1/4 c. sliced mushrooms
2 c. stewed or fresh tomatoes
1/2 tsp. salt
Dash pepper
Few drops Tabasco sauce, optional
1/2 tsp. basil, optional

Cook onion, green pepper, and sliced mushrooms in oil over low heat for about 5 minutes. Add tomatoes and seasonings and simmer until sauce is thick, about 30 minutes. May also be used with meat and poultry.
