FISH CREOLE 
1 c. hot water
1/3 c. raw rice
1 (8 oz.) can tomato sauce
1/2 tsp. basil
1/2 c. onion, chopped
1/2 tsp. hot pepper sauce
1/2 tsp. salt
12 oz. cod fillet
1/4 tsp. tarragon

Cut cod into 3/4 inch cubes. In 1 1/2 quart casserole, combine all ingredients except cod. Mix well. Cover, microwave on high 5 minutes. Reduce heat to medium 20 to 25 minutes or until rice is tender. Stir in cod. Recover, microwave on medium 4 to 5 minutes until fish flakes easily with fork, stirring once. Let stand covered 3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
