“RUM BALLS” IS IN:
NEXT RECIPE:  SALT WATER TAFFY

RUM BALLS 
1 (6 oz.) pkg. semi-sweet chocolate chips (1 c.)
1/2 c. granulated sugar
1/3 c. rum (Jamaica brand is good)
3 tbsp. light corn syrup
2 c. crushed vanilla wafers (44)
1 c. ground walnuts
confectioners' ugar, to roll balls in

In a saucepan melt chocolate over low heat. Stir in sugar, rum, and corn syrup. Fold in wafers and nuts. Shape into balls using 2 tablespoons of mixture for each ball. Roll in confectioners' sugar. Store in an airtight container for several days before using.

This is the exact recipe I have used for years and it has always turned out great! I have used various types of alcohol: amaretto, cointreau, rum, etc. I plan to try kahlua next!

Very simple very inexpensive and very good. There is a lot of room for improvisation here and I like that ;-). The hardest part is rolling into balls.

Instead of rolling into all those little balls I make rum BARS. Just put some wax paper down in a 9x13 pan and add mix to pan. **VERY IMPORTANT**: Only spread the mixture about 3/4 length of pan or they will be too thin! Also, I like to add a little coconut or chopped up maraschino cherries and use dark chocolate chips. Easy on the cherries, they have a lot of moisture... drain best you can. ENJOY!!
