SALTED NUT ROLL | |
2 tbsp. butter, divided 5 oz. marshmallows (1/2 bag) 1 c. powdered sugar 1/4 tsp. vanilla 1 1/2 c. chopped peanuts, divided 7 oz. caramels 1 tbsp. water Melt 1 tablespoon butter and marshmallows, stirring until melted. Beat in enough powdered sugar to make mix workable to knead. Knead until smooth. Add vanilla and 1/2 cup peanuts. Knead using remaining powdered sugar until smooth. Shape in a 12 inch roll. On a piece of plastic wrap place remaining 1 cup peanuts in a 4 x 12 inch rectangle. Melt caramels, 1 tablespoon butter and 1 tablespoon water. Pour over peanuts, when cool place roll in center. Use the plastic wrap to lift caramel and nuts around marshmallow roll. Press peanuts into caramel. I put mine in a cool place, then slice and wrap individually. If you have trouble spreading the caramel pour slowly over the peanuts, drizzle it on. |
