GLADYS' LEMON SPONGE PIE 
1/4 c. melted butter
1 c. sugar
3 tbsp. flour
3 egg yolks, slightly beaten
Juice and grated rind of 1 lemon
1 1/2 c. skim milk
3 stiff beaten egg whites
1/2 recipe plain pie pastry

Blend butter with sugar and flour. Add egg yolks, lemon juice and peel and milk. Fold in egg whites. Pour into 9 inch pastry lined pie pan. Bake 8 minutes at 450 degrees; then 30 to 40 minutes at 325 degrees. Top will brown lightly.
