BARBECUED PINEAPPLE | |
This is the perfect end to a perfect barbecue. 1 whole pineapple (fresh) 1/2 cup rum 2 tbsp. melted butter 1/2 tsp. vanilla 1/2 cup brown sugar ice cream First you need to dress the pineapple by cutting off the rind and the eyes. Once the pineapple has been prepared, you should slice it into 1/2-inch thick rounds (This will yield 6-7 slices.) In a shallow baking dish combine rum, melted butter, vanilla and brown sugar. Place pineapple slices in the liquid and let them soak in this for at least 30 minutes. Fire up the grill and cook for 3-minutes a side. Plate them and cut out the 1-inch core.
