MINESTRONE A-LA MILANESE 
3 tbsp. olive or salad oil
1/2 c. finely chopped onion
1/4 c. finely chopped parsley
3 beef bouillon cubes
1 1/2 tsp. meat-extract paste
1 tsp. dried basil leaves
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. diced pared potatoes (2 med.)
2 c. diced zucchini (1 lb.)
1 c. sliced celery
1 c. shredded cabbage
1 c. sliced carrots
1 (9 oz.) pkg. frozen cut green beans, thawed
1 1/2 c. raw reg. white rice

Heat oil in large kettle. Add onion and parsley, saute for 5 minutes. Add 3 quarts water, bring to boiling point. Add bouillon cubes and meat extract paste. Stir until dissolved. Add basil. Add rest of ingredients, except rice. Bring to boil. Reduce heat, simmer covered for 20 minutes. Add rice. Simmer, covered for 25 minutes or just until rice is tender. Serve hot.
