RISSOTO MILANESE (RICE JUNK) 
1/4 c. butter
1 med. onion, chopped
1 c. uncooked rice
2 c. chicken broth
2 c. ham, chunked
1 can mushrooms
1/2 c. grated Parmesan cheese

Heat butter in skillet and saute onion. Add rice and cook, stirring constantly until rice is golden and onion is soft. Stir in broth, ham, and mushrooms and simmer, covered, for 12 to 14 minutes or until rice is just tender. Mix in Parmesan cheese.
