CHICKEN BROCCOLI CHOWDER 
2 c. chicken broth
1/3 c. onion, chopped
1 (10 oz.) pkg. frozen chopped broccoli
1 1/3 c. instant mashed potato flakes
2 c. cooked chicken, cubed
2 c. Swiss cheese, shredded
2 c. fluid milk

Combine the broth, onion and broccoli in a 3 quart saucepan; heat to boiling. Reduce the heat; cover and simmer for 5 minutes. Add the potato flakes; blend thoroughly. Stir in the chicken, cheese and milk. Cover over low heat until the mixture is hot and the cheese is melted (about 5 minutes). Serve immediately.
