CHICKEN BROCCOLI CHOWDER | |
4 c. carrots, sliced 4 c. water 4 c. cooked chicken, diced 2 (10.75 oz.) cans condensed chicken broth 2 (10 oz.) frozen broccoli, chopped 1 c. onion, chopped 2 tsp. salt 1 c. ground oat flour 4 c. milk 3 c. Swiss or Monterey Jack cheese, shredded Ground oat flour (1 c. Quaker oats, uncooked, in blender) Combine carrots, water, chicken broth, broccoli, onion and salt in a 4 quart pot. Bring to a boil over medium heat. Reduce heat, cover and simmer 10 minutes. Return to full boil and gradually add oat flour, stirring constantly. Stir in milk and chicken. Simmer, stirring occasionally for approximately 10 minutes. Remove from heat, stir in cheese. Cover, let stand 3 to 5 minutes. |
