BATTER BAKED THIGHS 
10-12 fryer thighs
3 eggs
2/3 c. milk
1 c. flour
1/2 stick butter (melted)
Salt and pepper to taste

Put fryer thighs in Dutch oven. Cover with water. Bring to boil; reduce heat. Cover, simmer for 45 minutes. Remove thighs, allow to cool 15 to 20 minutes. Cut along bone and remove. Place boneless thighs (skin side up) in lightly greased baking dish (about 8x8 inch). Salt and pepper to taste.

Preheat oven to 425 degrees. Beat eggs, milk, melted butter and flour to a smooth batter. Pour over thighs. Bake 20 to 25 minutes or until golden brown.
