EMMA'S PEANUT BUTTER COOKIES 
1 c. light brown sugar
6 c. confectioners' sugar
1 tsp. vanilla
28 oz. jar creamy peanut butter
1 c. melted butter
1 3/4 c. chocolate chips
4 tbsp. butter

Stir with spoon, then mix with hands. Put into jelly roll pan 10 x 15 inches. (Rolling pin with waxed paper over mixture works well.) Melt chocolate chips with butter over low heat. Spread over jelly roll mixture. Chill then cut into 1 inch squares.
