MIMI'S SPINACH PARMESAN 
2 (10 oz.) pkg. frozen chopped spinach
2 slices bread
1/2 c. minced onion
1/2 c. melted butter
1/4 tsp. thyme
1/4 tsp. minced garlic
1/2 c. heavy cream
3 eggs, well beaten
1 c. Parmesan cheese

Thaw spinach; drain and squeeze dry. Chop until there are no large stems. Put in mixing bowl. Tear bread into small pieces and add with all other ingredients. Blend well. Put in lightly buttered baking dish.

Bake at 400°F for about 20 minutes until lightly browned.
