PARMESAN SPINACH BALLS 
2 pkgs. frozen chopped spinach
2 lg. onions, chopped
3/4 c. butter
2 c. cornbread stuffing mix
5 eggs, beaten
1/2 c. Parmesan cheese
1 tbsp. garlic powder

Cook and drain the spinach. Saute the onions in the butter until onions are transparent. Add to stuffing mix, then combine with eggs, spinach, Parmesan cheese and garlic powder. Roll into walnut sized balls and freeze on a cookie sheet. Keep frozen in plastic bag until ready to bake. Bake at 400 degrees for 15 to 20 minutes. Watch them carefully, they should be firm not mushy.
