TEXAS CAVIAR 
1/2 med. bell pepper, chopped
1/4 bunch cilantro
1/ bunch green onions, use stems
1 sm. white onion, chopped
2 tomatoes, peeled and seeded
1 c. Wish Bone Italian dressing
3 pickled jalapenos, seeded and chopped
1 lb. dried blackeyed peas

Cook peas in boiling water for about 40 minutes until cooked, but not too soft. Drain water. In a large mixing bowl combine remaining ingredients and mix. Add peas to mixture and blend well with a spoon. Refrigerate for 24 hours. Serve with tortilla chips.
