6 c. sliced pared tart apples
1 1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 c. milk
2 tbsp. butter butter, softened
2 eggs
1 c. sugar
1/3 c. buttermilk baking mix
Streusel Topping
Ground cinnamon, if desired

Grease 10-inch microwaveable pie plate. Mix apples, 1 1/4 teaspoons cinnamon and the nutmeg; spread in pie plate. Beat remaining ingredients except Streusel Topping and cinnamon until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour over apples. Sprinkle with Streusel Topping and cinnamon.

Microwave uncovered on medium-high (70%) until knife inserted in center comes out clean, 24-28 minutes, rotating pie plate 1/4 turn every 8 minutes. Let stand on flat, heatproof surface (do not let stand on wire rack). Yield: 6-8 servings.
