LAKEWAY CHICKEN SALAD 
1 pkg. chicken-flavored Rice-a-Roni mix
6 green onions, sliced
1/2 c. green pepper, minced
1/4 c. stuffed green olives, sliced
1/3 c. mayonnaise
2 (6 oz.) jars artichoke hearts, drained
Reserve marinade
1/4 tsp. curry powder
2 1/2 c. cooked chicken, cut into bite-sized pieces
Parsley

Prepare Rice-a-Roni according to directions on package, omitting butter. Drain and combine with onions, green peppers and olives. Mix mayonnaise, marinade from artichokes and curry powder. Add to rice mixture; stir just enough to mix. Add chicken and artichoke hearts and toss lightly. Chill and serve garnished with parsley. Serves 8-10.
