CUSTARD CREAM FILLING FOR CREAM
PUFFS
 
1/3 c. flour
7/8 c. sugar
1/8 tsp. salt
2 eggs or 4 yolks, slightly beaten
2 c. milk, scalded
1 tsp. vanilla or 1/2 tsp. lemon extract

Mix dry ingredients, add eggs and milk. Stir until smooth. Cook in double boiler 15 minutes or until thickened, stirring constantly. Add flavoring when cool.
