DANISH APPLE CHEESECAKE 
1/2 c. butter
1/3 c. sugar
1/4 tsp. vanilla
1 c. flour
16 oz. cream cheese (may substitute "light" cream cheese)
1/2 c. sugar
2 eggs
1/2 tsp. vanilla
1/3 c. sugar
1/2 tsp. cinnamon
3-4 apples, peeled & cored
1/4 c. sliced almonds

1. Cream together butter, 1/3 cup sugar, 1/4 teaspoon vanilla and 1 cup flour. Press onto bottom and sides of spring form pan.

2. Mix together cream cheese, 1/2 cup sugar, eggs and 1/2 teaspoon vanilla and pour into pastry lined pan.

3. Slice apples very thinly and mix with cinnamon and sugar. Place on top of cream cheese mixture. Sprinkle with almonds.

4. Bake at 450 degrees for 10 minutes. Reduce heat to 400 degrees and continue baking for 30 minutes, or until set.

6. Cool before removing from pan. Can be frozen after cooking. Serves 12.
