BLACK BOTTOM CUPCAKES | |
8 oz. cream cheese 1 beaten egg 1/3 c. sugar 1/8 tsp. salt 1 1/2 c. flour 1/4 c. cocoa 1 c. sugar 1/2 tsp. salt 1 tsp. baking soda 1 c. water 1/3 c. cooking oil 1 tbsp. vinegar 1 tsp. vanilla 1 pkg. mini chocolate chips Combine cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt. Beat well. Stir in package of mini chocolate chips. Set aside. Sift together flour, 1 cup sugar, cocoa, 1/2 teaspoon salt, baking soda. Once sifted add water, cooking oil, vinegar and vanilla. Beat well. Line mini cupcake pan with paper cupcake liners. Fill with 2nd mixture (about 1/2 to 2/3 full). Then drop first mixture - about 1/2 teaspoon on top. Bake at 350 degrees for 20 minutes. |
