HEALTH BANANA BREAD 
1 stick butter
1 c. sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
3 med. bananas, mashed
2 c. flour
1 c. whole wheat
1/2 c. nuts, chopped
Cinnamon and sugar, mixed

Cream butter and sugar; add eggs, blend. Add mashed bananas and vanilla. Slowly add sifted flour, baking powder and baking soda. Stir in nuts; turn into a greased loaf pan. Sprinkle cinnamon and sugar on top. Let rest in pan for 10 minutes. Bake in 350 degree oven for 1 hour or until straw inserted in center is clean. Let bred rest in pan for 10 minutes; cool. Slice and serve for dessert with fruit. I add 3 tablespoons wheat germ to flour and sugar can be reduced to 3/4 cup if desired. Keeps well in refrigerator for 2 weeks and freezes well.
