FETTUCCINE ALFREDO 
12 oz. flat egg noodles, you may use the green ones but it won't be authentic
1/4 c. butter
1 c. heavy cream
1 c. freshly grated Parmesan cheese
Dash of nutmeg
1/2 tsp. salt
Freshly ground black pepper

Cook the noodles, al dente - firm to the teeth - not too much, please. Heat the cream and the butter until it thickens slightly. Toss the noodles in the cream mixture over low heat and add the seasonings. Garnish with parsley and more Parmesan cheese.

VARIATION - TORTELLINI ALFREDO - with ham and peas.

Use 1 package fresh tortellini (in deli section at grocery store). Cook as directed on package. In same pan, melt butter, heavy cream (whipping cream), while noodles drain.

Microwave 1 1/2 to 2 cups frozen peas, cut up any kind of ham you want into small cubes or squares.

Put tortellini back in the pan on LOW heat with butter and cream. Add nutmeg, salt, and pepper. Add peas and ham. When its all mixed and heated through, turn off the heat and add Lund's (best kind to use) grated Parmesan. Toss well until cheese melts. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
