SQUASH CASSEROLE 
8 slices bacon
2 lg. onions, chopped
1 lg. pinch of dry chili pepper
1 lg. can tomatoes
Salt and pepper to taste
2 lg. bell pepper, coarsely chopped
6-8 sm. zucchini
1 (6 oz.) Stove Top dressing
1 sm. can tomato sauce

Fry bacon until crisp. Remove from skillet, set aside. Into drippings add bell pepper and onion, saute until tender. Add zucchini, tomatoes, tomato sauce, 1/2 cup water, pepper flakes, salt to taste. Cover, simmer for 20 minutes. Pour into large casserole dish. Add Stove Top mix, flavor packet also. Crumble bacon, mix well. Cover with shredded cheese. Bake at 350 degrees for 20 minutes.
