QUICK AND EASY BUTTERMILK
BISCUITS
 
1/3 c. butter, cut up
2 c. self-rising flour
3/4 c. buttermilk
1 tbsp. butter, melted

Put flour in a mixing bowl; cut in butter using a pastry blender or two knives until mixture is crumbly with large chunks of butter the size of walnuts. Stir in buttermilk just until dry ingredients are moistened.

Turn dough out onto a lightly floured surface; knead several times. Pat or roll dough out to 1/2 or 3/4-inch thickness. Cut out with a 2 1/2-inch round cutter.

Place on a lightly greased baking sheet; bake in a preheated 425°F oven for 12 to 14 minutes.

Brush tops with a little melted butter.

Makes about 6 biscuits.
