GLAZED ELEPHANT GARLIC 
4 bulbs elephant garlic
1 tbsp. water
2 tbsp. brown sugar
1 tbsp. butter

Clean garlic; divide into cloves. (You should have about 20 cloves.) Remove and discard the skins and stems. Slice any large cloves. Arrange the garlic in a 9" microwave safe pie plate. Add water. Cover with vented microwave safe plastic wrap. Micro-cook on 100% power (high) for 5 to 7 minutes. (Low Wattage Ovens: & 1/2 to 10 1/2 minutes) or until the garlic is tender, stirring once. Set aside.

In a 1 cup glass measure, combine the brown sugar, honey and butter. Cook, uncovered, on high for 1 1/2 to 2 1/2 minutes (low wattage ovens: 2 to 3 minutes) or until the honey mixture is thickened and syrupy, stirring after every minute. Drain garlic, if necessary. Drizzle the honey mixture evenly over the garlic. Micro-cook, uncovered on high for 1 to 2 minutes or until heated through. Spoon over meat. Makes 4 servings, 113 calories per serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
