ROAST VEAL SHANKS | |
4 veal shanks Salt, pepper & sugar 4 slices bacon 1 onion, sliced 1 c. dry vermouth Rub shanks with salt, pepper and sugar. Wrap with bacon and secure with toothpick. Bake in Dutch oven at 400 degrees until brown. Add onion, vermouth and cover tightly. Bake 1-1 1/2 hours until tender at 350 degrees. Potatoes and carrots may be added if desired. Makes a delicious gravy. Serves 4. |
