MINI CHEESE CAKES 
8 oz. cream cheese
2 c. flour
2 sticks butter

Mix the above until it forms a soft dough. Cover and refrigerate for several hours or overnight. Remove from refrigerator 30 minutes before making. Pinch off small balls of dough, press into tart pan, against sides and bottom. Fill with cream cheese filling (see below) and bake at 350 degrees for 20-25 minutes. Cool 20 minutes then brush with preserves.

FILLING:

2 (8 oz.) cream cheese, room temperature
1 tsp. vanilla
2 eggs
1/2 c. sugar
