DAWN KENT'S PEACH OR NECTARINE
GLAZE PIE
 
8 fresh peaches or nectarines
3 tbsp. cornstarch
1/2 c. water
1/8-1/4 tsp. almond extract
1 graham cracker crust
1 c. sugar
2 tbsp. butter, optional

Combine 1 cup mashed peaches (approximately 2 1/2 peaches) with sugar, cornstarch and water. Cook until thick, stirring constantly. Remove from heat; add butter and almond. Slice remaining peaches into cold graham cracker crust. Top with glaze. Refrigerate.

Microwave instructions: Stir cornstarch in water until dissolved. Add to mashed peaches. Microwave on high for 2 minutes. Stir 2 minutes. Stir etc. until thick. Remove. Stir in butter and almond; let stand 4 minutes. Pour over peaches and chill.

Since microwave ovens vary in power, you may need to adjust your cooking time.
