ENCHILADA PIE | |
2 lb. ground beef 1 tsp. salt 1 med. onion, chopped 3 c. enchilada sauce 1 c. water 12 corn tortillas 1 c. shredded cheese 1 c. shredded Monterey Jack cheese In large pan, brown beef with salt and onion. Drain off excess fat. Add enchilada sauce and water. Simmer for 5 minutes. In deep casserole dish, place 1/3 of the meat mixture. Arrange 2 or 3 tortillas over mixture. Top with 1/3 of cheese. Then repeat process until all ingredients are used. Place uncovered casserole in oven at 350 degrees about 25 minutes or until heated through. |
