SPINACH CHEESE CASSEROLE 
1 sm. pkg. frozen spinach
3 eggs
4 tbsp. flour
1/2 lb. American cheese
1/2 lb. brick cheese
1 lb. sm. curd cottage cheese
Salt and pepper to taste

Cook spinach in microwave according to instructions on package. Let cool 1 hour. Beat eggs; add eggs to spinach, then flour, salt and pepper. Shred brick and American cheese. Add to mixture plus cottage cheese. Pour in greased 9x13 inch casserole dish and bake at 350 degrees for 1 hour. Let sit 10 minutes before cutting.

Since microwave ovens vary in power, you may need to adjust your cooking time.
