SPINACH CHEESE CASSEROLE 
2-3 pkgs. frozen spinach
3 eggs
8 oz. sharp yellow, cut up (combination of Swiss-brick, Monterey Jack and sharp yellow is good)
4 oz. Mozzarella cheese, grated
1-3 tbsp. flour
12 oz. sm. curd cottage cheese

Season lightly with a drop of red cayenne pepper, garlic powder, and a little black or white pepper. Mix in Mozzarella cheese. Set aside. Cook spinach and drain. Add beaten eggs and flour. Add cottage cheese, then other cheeses. Mix well and place in 2-quart casserole. Bake at 375 degrees for 45 minutes (350 degrees for glass).
