CRACKLIN CORN BREAD 
1 3/4 c. cornmeal
1/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 eggs, beaten
2 c. buttermilk
1 c. cracklings or pork rinds

Combine cornmeal, flour, baking powder, and soda. Mix well. Add eggs, buttermilk and cracklings, stirring well. Heat a well greased cast iron skillet in 400 degree oven for 3 minutes. Pour batter into hot skillet. Bake at 400 degrees for 35 minutes or until golden brown. Yield: 6 to 8 servings.
