BAKED FISH 
1 - 2 lb. fish filets (thawed)
1/3 c. flour or pancake mix
1/8 tsp. onion salt
Butter
2/3 c. cornmeal
1/8 tsp. celery salt
1/8 tsp. garlic salt
1 pt. buttermilk

Soak thawed fish in buttermilk for 1 hour. Mix cornmeal, flour, and seasonings together. Shake fish filets in mixture. Line the sides and thin layer on the bottom of baking dish with butter. Lay the filets in the buttered dish and place in a 350 degree oven. Bake for 8-10 minutes. Serve with almond slivers or lemon slices.
