JAPANESE CUCUMBER AND CRAB SALAD 
4 cucumbers, unpeeled, sliced thin
1 tbsp. salt
1 (6 oz.) can crab meat
1/4 c. light soy sauce
1/8 c. rice wine vinegar
1/2 tbsp. sesame oil
Pinch of sugar

Mix cucumbers with the salt. Place in colander. Let drain for 45-50 minutes. Mix with crab. Make dressing of soy sauce, rice wine vinegar, oil and sugar. Toss together.
